Long story short, I've tried the following solutions already:

Restarting Medal

Repairing Medal

Reinstalling Medal

Purging and reinstalling Medal

Restarting my PC

Creating exceptions for Medal in my antivirus

Installing Medal from my user folder

Running Medal in early access mode

Installing Medal with a VPN

Trying both HDMI ports on both my motherboard and monitor

I've tried the following games but none have worked with Medal:

Halo MCC

Sea Of Thieves

Minecraft Java and Bedrock

Titanfall 2

Roblox

Nier Automata

Cyberpunk 2077

It shows "no-options" whenever I try to select what monitor I want Medal to focus on.

Hey Thomas! That sounds like the recorder part of Medal is not available on your PC.

As you might have hear before, sometimes antivirus deletes the whole recorder from Medal's install folder and that basically breaks the recorder, since there is no recorder to run. Also, VPNs and firewalls can block Medal from downloading the recorder properly (the ISP Three Home Broadband from UK had some issues connecting to certain websites that uses Akamai: https://community.three.co.uk/t5/Broadband/Intermittent-connection-issues-loading-changing-site-secure-connection-failed-site-can-t-be-reached/td-p/20313/page/17)

The fix for this is usually easy:

If that does not work, then you will need to create a Support Ticket to the team can investigate further or to directly send you the recorder folder so you can extract it manually on your PC.
